After all the cooking you’ve probably done over Christmas, we thought this quick and easy recipe of roasted veggies with rice would be just the ticket. 

Sweet Potato
Courgette
Cherry tomatoes
Red onion
Red & yellow pepper
4 Garlic gloves
Olive oil
Basil to garnish
